Everything about this apple can be used — minus the stem and leaves -

homemade applesauce is such an easy way to start... as is dried apples (one of my favorites) — and the best recipe I have found is that you slice them pretty thin, place on a cooling rack — do not let them touch — in a 200* oven for about an hour -
they didn't even make into a preserving jar... the kids ate them...

even those peelings make a fantastic jelly...

also look for tea recipes... drying the peelings for potpourri...
