Homemade Dark Chocolate Truffles...



I doubled the recipe... because who wouldn't want 30 truffles??

Yield 30 Truffles

8oz. (2 bars) 60% Cocao Bittersweet Chocolate Baking Bar
1/3 cup heavy whipping cream — or just heavy cream (it's the fat content that makes a better taste)
6 Tbsp. unsalted butter, cut into small pieces
Bring cream to a small boil in medium saucepan, and then add the butter and stir until completely melted, and then add your chocolate and stir until smooth... Pour into a heat safe bowl (pyrex like) and cover, but into fridge about 2 hours until firm.

Working with a Tablespoon at a time, roll into balls, then roll into finely chopped almonds, cocoa powder, pecans, etc.

Yum!

I'll be posting the other treats and how it I wrapped it for the kids, but totally good enough to give to a close friend too!!!
