Bunny Breads...

This morning is just so super exciting here at Farm... (PSSST... By the way... at about 12 noon, I'll be showing you how the baskets look all done!)

We are all "patiently" waiting for Easter!!

Yesterday, it wasn't appropriate to post this recipe, but really, if you have kids, or grand kids, and you have an hour, totally make these treats! I'm so happy with the recipe... I made it:)

AREN'T THEY SO CUTE??

If you have been in my kitchen, you would be used to the smell of freshly baked bread, so the kids are unsuspecting of what I was doing... heee heeee!!

MAKES 8 LITTLE BUNNIES

  • 4 tsp. of fresh yeast (or 2pkg. quick rise)
  • 1/2 c. sugar
  • 1 1/2 tsp. salt
  • 4 1/2 cups flour
  • 6 T. butter
  • 2 eggs
  • 8 chocolate kisses
  • 1 T. confectioners sugar

Combine yeast, sugar, salt and 1 cup of the flour in your mixing bowl... meanwhile heat butter and 1 cup of water to about 125*... start your mixer on low, and beat in liquid with paddle attachment for just about 2 minutes (if using a food processor, then pulse until thoroughly combined — about 10 times). Set aside 1 egg white, but beat in egg and egg yolk with 1 cup of the flour... and mix up for about 2 minutes.

Stir in 2 1/4 cups of the flour and if you have a dough attachment hook for your mixer, use it and let stir for 4 minutes — while adding another 1/4 cup of flour gradually — (again, use your best judgement if using a food processor).

Shape your now dough into a ball, and cover it with a dry towel and allow to rest 15 minutes or so.

Preheat oven to 375*... meanwhile grease 2 cookie sheets with butter, and cut your dough into 8 pieces.

For each bunny: (4 bunnies per sheet)

  1. cut 1 piece of dough into half and shape that half into a ball — place a kiss in the center of the body -put onto cookie sheet
  2. cut the other half into 2 pieces and shape half into a ball and brush with egg white... next to the large ball, tuck the bunny's head under the big ball...
  3. with the remaining amount use 1" piece for the bunny's tail (shape into a small ball) and the other dough into 2 ears... curl if you want:)
  4. Brush the tail and ears and whole body of bunny with egg white... use chocolate chips for eyes and sprinkles for whiskers if desired

Now you are done with 1 little yummy bunny... you only have 7 more to go:) ... it will get easier as you go, trust me.
